Description：
They are white or offwhite to yellowish crystalline powder, odorless or slight odor, L-tryptophan has slight bitterness, while DL-tryptophan and D- tryptophan have slight sweet taste. They will decompose at the temperature of 289 ℃, slight soluble in the water and insoluble in alcohol. They can dissolve in the dilute alkali, and colorate if being irradiated for a long time, to produce a small quantity of indole when heated together with water. A large amount of indole will be produced if heated together with sodium hydroxide or cupric sulfate; They are stable if heated together with acid in dark place, however, very easy to decompose if together with other amino acid, saccharide or aldehyde.
